Trader Joe's Healthy Bowl



Every now and then we want to throw in some other things this blog. McCall is a really good cook and loves to spend time in the kitchen and always creates great meals. This meal we want to share is a easy healthy meal that will only take you 30 minutes and you can get every ingredient at Trader Joes! #momwin 


Shopping list (Trader Joe’s)
-Riced cauliflower stir fry
-Shaved brussels sprouts
-Cut butternut squash
-Dates (pitted if available)
-Avocado
-Shaved Parmesan cheese
-Everything but the bagel seasoning
-Thai yellow curry sauce
-Avocado oil spray & or olive oil
-Salt
-Pepper

-Set oven to 400 deg

Brussels sprouts
-Slice 10 dates
-Empty bag of shaved Brussels sprouts onto a baking sheet. Scatter sliced dates on top. Spray with avocado oil spray or toss with olive oil. Sprinkle on salt and fresh cracked black pepper.

Butternut squash
-Empty bag of butternut squash into baking sheet. Spray with avocado oil spray or toss with olive oil. Sprinkle everything but the bagel seasoning on top of squash liberally.

Put both the Brussels sprouts and butternut squash in the over at the same time. Butternut squash on the top rack and shaved Brussels sprouts on the bottom.
Set the timer for 20 min.

While those are roasting you can slice up your avocado into little squares.

I also like to add grilled chicken to this. Tonight I forgot so we decided to eat it the bowl meatless. I like to buy the pre grilled chicken from Trader Joe’s and I chop that while my veggies are roasting.

Once the 20 min is up, take out the Brussels sprouts. They should be browned and little crispy. Set the timer for another 10 min for the butternut squash so it can continue to roast.

During that 10 min I take my bowls and fill them with the cauliflower rice. I split 1 bag between 2 bowls. Microwave each bowl for 3 min.

 I am explaining how to make 1 bowl. My husband and I have big appetites so I take half of all the portions and split them between the two of us.
Start with the microwaved cauliflower rice on the bottom of the bowl, then add half the Brussels sprout date mixture, half the portion of butternut squash, (chicken if you added it), half an avocado, and a big sprinkle of shaved parmesan cheese. Lastly drizzle the Thai yellow curry sauce over the whole bowl! Enjoy!
